When you think of classic Italian cheeses, you think Provolone. In Italy, when you think Provolone, the name that immediately comes to mind is Auricchio – the first family of provolone.


Based in Sardinia, the Locatelli family has been crafting sheep’s milk cheeses for over 200 years. Their cheeses are rich, buttery, and nutty, thanks to pasture-raised, grass-fed sheep from family-run farms.


Parmigiano-Reggiano is a hard, dry cheese made from skimmed or partially skimmed cow’s milkOriginating from Parma, Reggio Emilia, Modena, Mantua, and Bologna, it features a pale-golden rind, straw-colored interior, and a sharp, complex flavor developed through aging—typically 12 to 36 months.
